Dessert cake with peaches

Peaches are peeled, then cut into coarse slices, ie larger.

In a heat-resistant pan, place the peach slices and sprinkle with brown sugar, put in the oven in the preheated oven, at 200 degrees approx. 10 minutes, until the sugar melts and you get a caramel crust.

Meanwhile, mix the eggs vigorously with the sugar, salt and vanilla sugar until a fine cream is obtained.

Then add the sour cream, stirring gently until incorporated into the cream above. Pour the oil into a thin thread and mix until the needles are incorporated into the egg and sour cream composition.

Sift the baking powder together with the flour, then add it lightly to the dough, stirring until it is incorporated and a homogeneous dough is obtained, which flows easily, a little thicker than that of pancakes.

The obtained dough is poured over the lightly caramelized fruits and baked in the preheated oven for approx. 15 minutes at 200 degrees, then another 15 minutes or as needed until the toothpick test passes at 170 degrees.

The cake is poured hot on a plate, otherwise you risk not peeling off the bottom of the tray.

Serve hot with the addition of ice cream or cold as such.
