Caesar Potato Salad with Grilled Red Onion

Ingredients

  • 3 anchovy fillets rolled with capers
  • 2 garlic cloves, coarsely chopped
  • 3 tablespoons olive oil, divided
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot pepper sauce
  • 1/2 teaspoon Worcestershire sauce
  • 1 large red onion (about 1 pound), peeled
  • 2 pounds red-skinned baby potatoes
  • 3 tablespoons freshly grated Parmesan cheese

Recipe Preparation

  • Puree anchovies and garlic in small processor, scraping down sides of bowl occasionally. Add 2 tablespoons oil and next 4 ingredients; process until smooth. Add mayonnaise and pulse just to blend. Season dressing with salt and pepper.

  • Prepare barbecue (medium heat). Cut onion into 1-inch cubes; thread onto metal skewers. Brush onion cubes with remaining 1 tablespoon olive oil; sprinkle with salt and pepper. Grill until lightly charred and soft, turning occasionally for even grilling, about 12 minutes. Cool. Remove onion cubes from skewers and place in large bowl. DO AHEAD Can be prepared 2 hours ahead. Let stand at room temperature.

  • Place potatoes in large pot. Add enough water to cover by 1 inch. Bring to boil. Reduce heat to medium-high and boil until potatoes are just tender, about 15 minutes. Drain; cool.

  • Cut potatoes into wedges. Add potatoes and cheese to bowl with onion cubes. Pour dressing over potatoes; toss to coat. Season salad to taste with salt and pepper. DO AHEAD Can be made 1 day ahead. Cover and refrigerate.

  • Line large plate with romaine lettuce leaves. Spoon potato salad into center of lettuce and serve.

Grilled Potato Salad Recipe

When I went to grill the potatoes and squash I set each piece on the grill, I suspect you could also use one of those grill baskets with success as well. I also though about finishing this version with chopped jalapeno, cilantro and toasted sesame seeds - you can make it as simple or embellished as you like, depending on your individual tastes. I used a red-leafed lettuce here.

10 medium-sized new potatoes, unpeeled and quartered
3-4 small yellow summer pattypan squash, cut in half
1 bunch of green onions or spring onions
a big splash of olive oil
2 lemons, cut in half

1/4 cup rice vinegar
1/4 cup olive oil
clove of garlic, mashed and chopped
a couple drops of toasted sesame oil
salt

1/2 a head of lettuce, washed and cut into bite-sized pieces

Toss the potato wedges, squash, and green onions with a bit of olive oil and a pinch of salt. Place them on a medium-hot grill. Place the lemons on the grill as well, cut side down. Grill for 10-20 minutes or until golden and cooked through - moving around the grill if needed and flipping to get color on all sides. The squash will likely cook faster than the potatoes, remove pieces and place on a platter when they are done grilling.

While everything is grilling, whisk together the rice vinegar, olive oil, garlic, sesame oil, and a couple pinches of salt. When the onions come off the grill, let them cool for a couple minutes and then cut into 1/2-inch segments. Set aside.

Toss the lettuce with a splash of the dressing, and turn it out onto a large platter. Now toss the vegetables (but not the lemons) with a big splash of the dressing and arrange it on top of the lettuce sprinkled with the reserved grilled green onion segments. Garnish with the lemon (which I like to squeeze over my salad just before eating for an added layer of extra mellow tang that goes great with the potatoes.

Potato Salad Recipes to Try This Summer

One of my go-to recipes for summer picnics and barbecues is potato salad. I love a good classic recipe, but sometimes it’s fun to change things up a bit. The Internet is full of not-your-ordinary potato salads. I’ve found a bunch that I want to try and am sharing them with you today! Check out these delicious potato salad recipes to try this summer. In a large pot of salted water, cook the potatoes until tender. Drain. When cool enough to handle, cut in half, place in a large bowl with the onions and set aside.

Cut the slices of prosciutto in half lengthwise. Place on a parchment lined baking sheet and bake in a 400°F oven until crispy. Remove and set aside.

To make the dressing, combine the sour cream, mayonnaise, olive oil, garlic, Dijon mustard, anchovy paste, vinegar and Worcestershire sauce. Whisk until combined.

Add the dressing to the potatoes. Toss well. Crumble half of the prosciutto and add to the salad along with the Parmesan. Toss again.


Creamy Italian Potato Salad Recipe

A warm potato salad makes a great side dish for pork chops or ham, and this one has Italian flavors like Parmesan a.

  • 3 pounds red potatoes, cubed
  • 2/3 cup Parmesan cheese, grated
  • 1 cup ricotta cheese
  • 4 garlic cloves, minced
  • 1/2 medium red onion, sliced into thin rings

Mediterranean Potato Salad

Everybody should have a great potato salad in their picnic repertoire, right? This one is my go to recipe and doesn.

  • 4 pounds small new potatoes or fingerling potatoes, scrubbed clean
  • Salted water (1 1/2 teaspoons salt for every quart of water) for cooking the potatoes
  • 1 pound fresh, tender green beans, trimmed and cut into 1-inch pieces (4 cups prepped green beans)
  • 3 large roasted red bell peppers*, core removed, flesh cut into 2 x 1/4-inch strips (about 2 cups, or a 16 ounce jar, drained)
  • 3/4 cup red onion, minced
  • 1 cup minced, pitted Kalamata and green olives (mini-chopper works well for this)
  • Large handful fresh Italian parsley leaves, roughly chopped
  • Large handful fresh baby arugula leaves
  • 2 tablespoons whole grain mustard
  • 1/3 cup red wine vinegar
  • 1 teaspoon dried tarragon (or herbes de provence)

  • PRESSURE COOKER:

Caesar Potato Salad with Grilled Red Onion - Recipes

My good friend, Dawn, was kind enough to get me a subscription to The Food Network magazine. (Thanks, Dawn!!) This month's issue has a "He-Made, She-Made" potato salad cook off between Paula Deen and Aaron McCargo, Jr, and both recipes looked so good that I decided to make them (though not in the same weekend.) Mother's Day seemed like a great day to try a new recipe. I chose Paula's Red Potato Salad with Bacon to make today, and I'm glad, because it was delicious . Here's the play-by-play:

Before I begin, I have to explain the first photo, which I took when my camera was set on Macro. For the record, I don't know macro from macaroni, so when it turned out terribly, I decided to go to Picnik (my favorite phot0-editing website) and just do something fun with it, so here it is.Ingredients:
6 cups cubed red-skinned potatoes, unpeeled (about 1 and 3/4 lbs)
2-3 strips of bacon
Freshly ground pepper
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 cup chopped sweet pepper (any color or combination)
1/4 cup minced red onion
2 sliced scallions
1 tablespoons dijon mustard
1 tablespoons mayo (Paula might die, but I used Miracle Whip)
3/4 teaspoon salt x 2

First, clean your potatoes. Again, I love Veggie Wash for this (and they are not paying me to say that!)Place the potatoes in a large pot, and cover them with water.Add 3/4 tsp sea saltand bring to a boil over medium-high heat. Cook until tender, 8-12 minutes. Drain and cool slightly.

Meanwhile, cook the bacon (or just take it out of the box, like I did. Don't you love precooked bacon?!) After the bacon is cooked and no longer dripping with grease, cut it up.Clean and cut up the rest of the veggies. (BTW, I only used part of these peppers Mr.4444 grilled up the remaining parts for supper--yummmm.) Isn't that picture gorgeous? I even looks misleadingly like my kitchen sink is immaculate! Believe me (and anyone who has ever been to my house), my kitchen sink is never immaculate.)

Here's another pic, which pretty much sums up the remaining ingredients (besides the potatoes, of course) in a neat little package:In a small bowl, whisk the olive oil, vinegar, mustard, mayonnaise, 3/4 tsp of salt, and pepper.Cut up the potatoes and add with other veggies to a large bowl. Pour previous whisked mixture over veggies, and stir to coat. Cover and refrigerate or serve at room temperature.We ate when it was room temperature, and it was terrific the dijon mustard and red wine vinegar made this a unique potato salad, but one that everyone liked. Now to put it up against Aaron's Classic Potato Salad. (I'll keep you posted !)

Caesar Potato Salad with Grilled Red Onion - Recipes

Roasted Onion and Red Potato Salad

Total Time: 1 hour plus chilling &bull Serves: 12


3 pounds Schnucks new red potatoes, unpeeled, larger potatoes cut in half
3 small yellow onions, cut in half
1-1/2 tablespoons Schnucks olive oil
2-1/2 teaspoons salt, divided
2-1/4 teaspoons pepper, divided
1/4 cup plus 1 tablespoon Schnucks apple cider vinegar
1 cup Schnucks real mayonnaise
3/4 cup Schnucks sour cream
1/4 cup plus 2 tablespoons sliced green onions
1/4 red bell pepper, chopped
1-1/2 tablespoons finely chopped fresh rosemary leaves
1-1/2 tablespoons Schnucks Dijon mustard
1-1/2 teaspoons Worcestershire sauce

Preheat oven to 350°F. In large bowl, gently toss potatoes and onions with oil, 1 teaspoon salt and 1/2 teaspoon pepper so as not to break up onion. Transfer potato mixture to rimmed baking pan. Roast 35 minutes or until potatoes are fork-tender.

Let potato mixture stand 10 minutes or until cool enough to handle. Cut potatoes and onions into 1/2-inch wedges transfer to large bowl. Stir in vinegar refrigerate at least 45 minutes or up to overnight.

To serve, fold in remaining ingredients, 1-1/2 teaspoons salt and 1-3/4 teaspoons pepper. Makes about 8 cups.

Each serving: about 252 calories, 23 g total fat (15 g saturated), 14 mg cholesterol, 687 mg sodium, 27 g carbohydrate, 3 g fiber, 3 g sugars, 3 g protein


Giggle Game Changer

The giggle was a game changer y’all. Two tables down enjoying Breadsticks and Bowtie Caesar Salad was a table of two men and one woman, and they owned a comedy club.

One of the men jumped up and all but ran to my table. He asked if I was interested in a job and I said I was already working more than I could handle. He said to quit the others and come work for him.

I stayed working at the Pizza Factory because I just couldn’t walk away from my favorite Caesar Salad, and I loved being a waitress. (I’m a social person— and— you are learning SO MUCH about me right now! Probably more than you care to know actually…).

However, I quit my other great jobs and took up a new one as a “laugher” at a comedy club. Where I was literally paid to sit in the crowd and feast on the yummy food while laughing at the comedians jokes.

Why would they hire someone to do that? Because sometimes crowds are tense and then the comedian gets tense and then laughing doesn’t happen,. But laughing is contagious so if someone with say a super loud super great laugh starts it, most everyone else will follow.

They also hired a guy that sounded like a donkey when he laughed. So maybe I don’t have such a great laugh. Maybe people weren’t laughing with me, they were laughing at me.
