Tiramisu original recipe

First we prepare the caramel.


Put the sugar in a saucepan and let it caramelize until it reaches the color of amber. Remove from the heat, add the butter and stir vigorously until the butter melts. Put it back on the fire, add the liquid cream and let it boil for another 1-2 minutes, stirring constantly. Let the caramel cool.


For the cream, mix the yolks with the sugar and milk and then put them on the steam bath, stirring constantly until they become creamy and take on consistency.

We then leave them to cool. Hydrate the gelatin in 100 ml of cold water for 15 minutes. Mix the cooled yolks with the mascarpone until you get a fine cream. Separately in a large bowl mix the whipped cream (not too hard, just enough to get the consistency.)

We line 2 cake trays with foil and then we put a layer of biscuits syruped in coffee mixed with Amaretto lichiro.


Melt the chocolate with liquid cream and then pour it over the biscuits in the pan. Let cool for a few minutes until the chocolate hardens. Melt the gelatin on a steam bath then put it over the mascarpone cream and mix well. Then add the whipped cream and mix until you get a fine cream.

We put about 200 g of cream over the chocolate chip cookies. Cover with another layer of syrupy biscuits. Grease the second layer of biscuits with 2-3 tablespoons of cream, then put the caramel in place. Cover with the rest of the cream and syrupy biscuits. Let it cool overnight.


For the caramelized walnuts, melt the caramel until it becomes slightly brown.

Add the walnut kernels and mix well to cover all the caramel walnuts. Put the walnuts on a wooden bottom lined with baking paper and let them cool until the caramel hardens. With the help of a twister we crush the nuts. Carefully turn the cakes on the trays and remove the foil. Cover the cakes with caramelized walnuts and let them cool for a few more hours.

In a saucepan with a thick bottom we put the milk, 4 yolks, a cup of sugar and a teaspoon of starch. Place the pan on low heat and stir until a cream is formed. Remove from the heat and when it cools add vanilla and mix well!
In a Teflon pan, caramelize, over low heat, three quarters of a cup of sugar until it gets a copper color, turn off the flame and add vanilla cream over it. Mix well. If it hardens, put it on the fire for a few more seconds. Let it cool well!
We beat the egg whites and whipped cream well!
We mix the caramel cream lightly, with a palette, with whipped cream and beaten egg whites!
We chop the Lion chocolate and throw it in the composition. Put in the freezer for a few hours.

If you prefer it without caramel, remove the part with the caramelized sugar from the recipe. Vanilla ice cream ready!

The recipe is exactly the one here, we didn't make any changes because we liked the tiramisu cake so much :)

It is made very quickly and it cooks even faster, especially if it is kept in the fridge for 3-4 hours before serving!
