This morning I give you the recipe for making blackberry muffins, yes, I know, still sweet, but it's the last one, I promise;)
This is a variant of my aunt Anna's recipe for making muffins with berries, I updated it because they were not very sweet for my taste, now I find them perfect. So here is the new blackberry muffin recipe.
How to make blackberry muffins
In a bowl, mix the egg with the melted butter and milk.
Add the sugar, flour and yeast.
Mix until you get a homogeneous mixture, then add the blackberries.
Grease the muffin molds and with a spoon fill 2/3 of their height with the mixture.
Bake the blackberry muffins at 180 ° C and bake for 20 minutes in a preheated oven.
Allow the blackberry muffins to cool then lift them from the molds and serve them to the table.

At the end of August we stopped in a field and under an apple tree there was a wonderful bush of wild blackberries! Luckily I had two paper cups in the car and so we started to collect them: 3 in the glass, one in my mouth :)
Back home with my booty, I immediately thought of making us some sweets: they weren't enough to make a jam, but enough for muffins.
Wild blackberries are much smaller than those found on the market: if you buy them at the supermarket, use half of them.
1 heaping tablespoon of honey
For about ten muffins
- Preheat the oven to 190 ° C.
- In a saucepan, melt the butter with the honey. Let it cool slightly.
- In a large bowl, mix all the dry ingredients: flour, yeast, sugar.
- Add the egg, yogurt, blackberries and melted butter with honey.
- Transfer the mixture to the muffin pan covered with baking cups. If you use normal cups, which do not exceed the height of the pan, fill them up to 3/4 full. If you use the ones from Ikea, which are tall, fill them up to the edge.
- Cook for 30 minutes or until golden and if skewered with a toothpick it will come out clean.
- Serve them warm or at room temperature.

Ingredients for 15 muffins:
200 grams of raw cane sugar
1 yogurt (white or wild berries to taste)
300 grams of type 2 flour
1 sachet of baking powder
70 gr of white chocolate chips
Beat the eggs with the raw cane sugar.
Add the yogurt and the seed oil while continuing to mix.
Add the flour and baking powder, continuing to mix until the dough is smooth and homogeneous.
Add the white chocolate chips and mix them well into the dough.
Pour a spoonful of dough into each cup.
Add 1 teaspoon of blackberry jam and the remaining mixture.
Complete each muffin with 5-6 fresh blackberries by pressing them into the dough.
Bake in a preheated static oven at 180 ° for 30 minutes.
Remove from the oven and leave to cool.

Blackberry mini muffins
I found this recipe at the bottom of one of last winter's bags. I was simply looking for something else and among expired tickets, packages of half-open butts and other crap (but because I'm so messy.) I found the torn page of a newspaper. It could only be a recipe. Who knows when and where I "stole" it. Better not ask too many questions and get to the point: let's ask them!
I like muffins, but over time I have realized that they must be made in miniature versions, otherwise they "get bored" and there is a risk that they turn out to be "gnucchi", that they will lapped the mouth. These are super quick and with a sprinkling of powdered sugar at the top they are delicious. It's not my bag, but they passed the exam!
Ingredients for about 12/14 mini muffiins
110g of flour 00
1/2 teaspoon of baking powder
100 g of zephyr sugar
half a jar of plain yogurt, preferably whole and creamy
a knob of melted butter
1 whole egg
1 pinch of salt
about twenty blackberries (or blueberries or raspberries or strawberries ..)
powdered sugar, to taste
Turn on the oven at 170 & # 176. Combine the dry ingredients in a bowl, then the flour, yeast, sugar and a pinch of salt. In another bowl, combine the liquid ingredients: milk, egg, yogurt and butter. Incorporate the liquid ingredients with the dry ones until the mixture is homogeneous and without lumps. Then add the blackberries, stirring briefly and gently so that they do not break. Grease a mini muffin mold and pour in the mixture filling each pirouette up to 3/4. Place in the oven and cook over a hot flame for about 15 minutes. Remove from the oven, let it cool and before serving sprinkle with icing sugar.

Meringue is a dessert that is often ordered in restaurants, precisely because of its freshness and unmistakable elegance.

This version of mine is very easy to prepare, excellent for the sweet tooth but especially for summer dinners.
Ingredients for a 24 cm diameter cake:
1 liter of fresh cream
200 gr of powdered sugar
150 gr of ready-made meringues
Sift the icing sugar directly into the cold cream from the refrigerator and whip the mixture.
While the cream is whipping, cover the base of a springform pan with parchment paper, coarsely crumble the meringues and cover the whole base, trying not to leave holes, since it will be the base of the cake.
Add half of the whipped cream and stir in the raspberries and blackberries.
Level everything with a spatula.
Cover the cream with other crumbled meringues, add the remaining whipped cream, level the surface with a spatula and decorate with the meringues and red fruits.
Put the cake in the freezer for at least 5 hours.
Before serving, place the cake in the refrigerator at least half an hour beforehand.
Serve cold, with hot chocolate if desired.
You can replace raspberries and blackberries with any other type of fruit or with chocolate chips.

Ingredients for a cake at 24 size:
1 lt of fresh cream to foam
200 gr icing sugar
150 gr meringue
Sift icing sugar directly in a fresh cream and whisk to foam.
During the time the cream became foam, cover the bottom of the cake form with a baking paper, add a big pieces of meringue to create a base of the cake.
When the cream are ready to use add the cream in a cake form, level with a spatula, add some raspberries and blueberries.
Cover the cream with some pieces of meringue, add the rest of the cream, level with a spatula and decorate with meringue and forest berries.
Add the cake in a freezer for about 5 hours.
Before to serve bring out and rest the cake in a fridge for about half an hour.
Serve cold, if you want with melted chocolate.
It's possible change the raspberries and blueberries with every type of fruits or pieces of chocolate.
