For the dough: Mix the eggs with the sugar and add the rest of the ingredients in turn. Homogenize the composition with a fork, so as not to remain lumpy with flour. Heat a Teflon pan, grease it with oil and add a pinch of the dough obtained. Let the sheet bake lightly on both sides. From the given amount, I obtained 14 sheets of pancakes that I greased with Ceva Fin Cream cheese to which I added the 2 tablespoons of sour cream and over which I added the cherry jam. I placed them side by side. They can also be rolled, but they will come out thicker due to the cherries.

Drain the oil well (possibly dab with a napkin), then put the filling on 4 pancakes. Sprinkle with freshly chopped green parsley, cheese cubes and finely grated cheese, making sure that the edges have grated cheese to stick.

Roll the pancakes by squeezing the ends then wrap the roll in baking sheet. Put it in the pan and bake it for 10 minutes in the preheated oven at 200 ° C.
While this is in the oven, prepare the sauce. Melt the butter, add the flour and heat it very little, then quench with milk. Let it boil a bit, add salt and a nutmeg powder. When it starts to show signs of thickening, add the grated cheese and mix well. When the sauce gains consistency we take it off the heat. I realized I didn't have a recipe for simple pancakes. And on top of that, I make them quite often (compared to other dishes). And who the hell doesn't love pancakes? If you don't like it, you're not normal. They are very versatile, from the filling to the composition of the pancake itself. They can also be made by fasting, only from water, oil and flour, to be made with eggs, milk, water, etc. They can be salty or sweet.

Here I will give an example of sweet pancakes, filled with jam and ice cream. You can fill them with whatever you want. A super combination is with honey and nuts.

ingredients:

  • 2 eggs
  • 300 g flour
  • 300 ml milk
  • 250-300 ml of mineral water
  • a pinch of salt
  • 1-3 tablespoons sugar (if you fill them with something salty, do not put sugar)
  • essences (vanilla, rum, whatever you want)

As a rule of thumb, the amount of liquid should be almost double that of flour. You can also put a few tablespoons of melted butter, for more tenderness, or a little oil. Sugar is not added much, the higher the chances of it sticking during baking.

Put the eggs in a large saucepan, or bowl, beat well with salt. Add sugar and a little flour, mix, then add a little milk, mix well, then flour, then milk, and so on, until done. When the milk runs out, we switch to mineral water. Mix well and crush the lumps of flour that form. At the end put the melted butter (to be cold not taken directly from the fire) or the oil and essences used. The final dough should be fine, without lumps, slightly thick. The thicker the pancakes, the thicker they are, and vice versa.

Refrigerate the dough for an hour or more. Keep in mind that it will thicken after it gets cold. Heat a frying pan greased with very little oil. It is important that the pan is well heated so that the pancake does not stick. Put the composition in a pan with a polish, and turn the pan so that it covers evenly. Do not put too much, because they come out too thick. Enough to cover the whole pan. The fire must be appropriate.

When the edges turn golden and the surface is compact, turn the pancake with a spatula. Leave it until it browns on the other side as well, and it is ready. The following are done in the same way.

Now comes the filling. Put the composition on one side of the pancake (not too much so that it doesn't stick out) and roll. Or grease the surface of the pancake with a thin layer and fold it. There are many options, choose what you like. You can also put a cup of ice cream on top. Something dreamy!
