  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 45g butter
  • 1 tablespoon lemon juice
  • 2 teaspoons minced fresh rosemary
  • 1 clove garlic, minced
  • 4 tablespoons dried breadcrumbs
  • 4 tablespoons grated Parmesan cheese

  1. Preheat the oven to 200 C / Gas 6. Lightly grease a roasting tin. Arrange salmon fillets in tin and sprinkle with salt and pepper.
  2. In a small saucepan over low heat, melt the butter. Add the lemon juice, 1 teaspoon of the rosemary and the garlic. Bring to a simmer and cook for 3 minutes. Remove from heat and drizzle evenly over the salmon.
  3. Combine the breadcrumbs, Parmesan cheese and remaining rosemary. Sprinkle on top of the salmon.
  4. Bake for 15 to 20 minutes, or until salmon flakes easily with a fork and top is golden brown.

No-Fail Oven Baked Salmon

Place salmon fillets in a small casserole dish or glass baking dish. If you purchased salmon with skin, place the fillets skin side down (the skin easily peels off after it has been baked).

Generously salt and pepper the salmon.

Squeeze the juice of one lemon over the salmon and then drizzle olive oil over everything.

Add a slice of lemon and rosemary over each piece of fish (optional).

Let marinate in the fridge for about an hour. If you don't have an hour, just marinate for as long as you can. It will still be delicious even without marinating at all.

Cover baking dish with aluminum foil and bake for about 20 to 25 minutes or until fish easily flakes with a fork. Remove foil and turn up the heat on the oven to 425 degrees.

Add grated parmesan cheese to each piece of salmon. Bake for another 2 to 3 minutes until the salmon starts to look a little crispy.

Remove from the oven and serve right away. Yum!

Oven-Baked Rosemary Salmon

Salmon is the most delicious fish! But you have to know how to prepare it, because if overcooked, salmon can be very dry and not juicy at all.

Ingredients

  • 7 ounces, weight Salmon Fillet
  • 2 Tablespoons Olive Oil
  • 1 pinch Salt
  • ¼ teaspoons Garlic Powder
  • ½ Lemon, Juiced
  • ⅓ teaspoons Dry Rosemary

Preparation

Gently wash salmon fillet with cold water and dry with paper towels. Set aside.

Mix olive oil, salt, garlic powder, and lemon juice. Pour 1/3 of marinade over salmon and marinate for about 30 minutes in the refrigerator. Preheat oven to 350°F (180°C). Line a small sheet pan with parchment paper.

Transfer salmon to prepared pan and bake for 15 minutes. Brush with 1/3 of marinade and bake for 5 minutes. Brush salmon again with remaining third of marinade and cook for another 5 minutes.

Sprinkle salmon with rosemary. Let rest at least 5–8 minutes. Serve and enjoy!

Ingredients

  • 2 6oz wild Salmon fillets skinned (fresh or frozen)
  • 2 Tbs Olive Oil
  • 1 Lemon sliced
  • 4 – 5 fresh Rosemary sprigs
  • 4 turns of ground Pink Himalayan Salt
  • 4 – 5 turns ground Peppercorn
  • Non-stick cooking spray

Instructions

  1. Note: if you’re using frozen salmon and don’t have time to thaw 8-10 hours in the fridge. You can simply keep the frozen salmon in plastic wrap it came in and put it in a large bowl filled with cold water. Let sit for about 20 minutes or until thawed.

  3. Line up 2 large pieces of tin foil onto a baking sheet and spray with non-stick cooking spray.
  4. Add 1 salmon per tinfoil.

This Rosemary Ranch Salmon is delicious! The combo of the flavors creates a tender and savory sauce that is out of this world. If you’re looking for a baked salmon recipe, this seafood dinner is so easy and so delicious!

ROSEMARY RANCH SALMON

When my son was 15 months old he was sitting on my lap and headbutted me so hard that he broke my nose. It was undeniably broken.

There was a huge cracking noise and my nose looked ‘C’ shaped. The doctor had to reset my nose and straighten my septum.

While he was examining me, he offered to give me the perfect nose for free while I was already under. You know, shave a little off the sides and make it smaller.

I’ve never liked my nose. Growing up I was always self conscious that it was big so the offer intrigued me – for a second.

After talking it over with my husband he said, “Yeeaaah, no. It’s not like trying on a shirt. If you don’t like it, you can’t just take it off – you’re stuck with a Micheal Jackson nose. I like the nose I married.

I knew he was right and I also knew I wanted my kids to know where they got their noses from.

My point is, change isn’t always good. Sometimes it is though. Like this salmon. I known everyone has their particular way that they like to cook salmon and few like to vary from their way. But you have to try this!

This recipe comes from my friend Crystal who is an amazing cook and has her own blog Dangerously Delicious.

We’ve known each other for years and everything she makes is always the absolute best. This salmon is no exception. We had no leftovers and everyone was fighting for the last piece – yes, even the kids.

You’re going to start by sprinkling your salmon with kosher salt and then rinsing it with water. Pat it dry and give it a generous squeeze of lemon. Sprinkle with kosher salt and pepper. Fresh rosemary is a must here. I thought I would use this much but I ended up using half. Rosemary is very fragrant and I was afraid it would be overly herb tasting but the rosemary mellows out while baking. I used about a tablespoon of minced rosemary.

And here’s where you turn this salmon into a dish your kids will eat. Ranch. I know it sounds weird but mixed with the lemon and rosemary, it’s divine.

My kids eat salmon regularly and used to think it was pink chicken. I’ve now educated them that pink chicken isn’t something they ever want to actually eat.

Bake and then broil for the last couple of minutes until you get a few golden spots. So easy and so delicious.


How To Make Parmesan Crusted Salmon

Garlic lemon salmon with Parmesan and herbs is really easy to make. You’ll only have to use super simple ingredients. Aside from the salmon itself, it’s likely that you have everything you need in your fridge and pantry.

We repeat the Parmesan cheese in both the spread and topping layers. Other than that, you’ll need sea salt, pepper, mayonnaise, lemon zest, garlic, fresh herbs (dill and parsley), and butter. I pretty much always have them around!

The prep time for Parmesan crusted salmon takes about ten minutes. Yay for saving time, right?

Start by preheating the oven and laying out your salmon filet on a lined baking sheet. Season the fish with sea salt and black pepper.

We’ll make the spread and topping separately, then layer them. For the spread, whisk together some Parmesan, mayonnaise, lemon zest, and minced garlic. Apply the spread evenly on the salmon.

Save the lemon you used to create the zest – more on that in a second.

The crumble topping will have a different consistency than the spread. This includes more Parmesan, fresh parsley and dill. Mix in some melted butter to create a crumbly texture, then you can sprinkle it all over the salmon.

Pat lightly to make sure the crumbles are secure, but don’t fully submerge them in the spread underneath. Keeping them on top will create that texture we are going for.

This is where you get to use the lemon you had leftover. If you don’t have another use for it, squeeze it over the fish. This part is optional, but adds more yummy lemon-y flavor.

Baked herb crusted salmon is actually very quick in the oven! At 400 degrees Fahrenheit, it takes about 10 to 15 minutes, depending on how thick the fish is. It’s done when it flakes easily with a fork.

Pair the Parmesan crusted salmon with a big salad or some roasted veggies, and you have a delicious, quick dinner! Try my friend, Valentina’s baked salmon with avocado salsa for another twist on this delicious fish.

If you’re going the veggie route, you can even arrange them alongside the lemon salmon before placing into the oven, for an easy sheet pan meal. Choose softer veggies, or cut them into very small pieces, to ensure that they cook through enough in the short time that the salmon needs.


How to make Baked Salmon

So! If you have an oven and the ingredients as listed above, you too can bake some seriously good salmon. All the detailed instructions are listed in the recipe card below, but here are the highlights:

  1. Unwrap your salmon and press with paper towels to remove any extra moisture.
  2. In a small bowl, toss melted butter, garlic, bread crumbs and parmesan cheese. It should look like damp sand after its been thoroughly mixed.
  3. Press the moist crumbs overtop the salmon to form a thin crust over the entire filet.
  4. Bake for 12-15 minutes or until thoroughly baked.
  5. Remove from oven and cool 10 minutes before cutting and serving.

Delicious and easy. I added a tsp of lemon infused olive oil to the rosemary/lemon juice and garlic baste along with salt and pepper. A very healthy quick and favorable dinner. Served with steamed broccoli.

I made this last night and it was wonderful! I didn’t have any garlic so left that out but the rosemary really put the fish over the top!

Gina , Gina, Gina …. this is FABULOUS! I cooked it in my air fryer at 380 degrees for 10 minutes and it was perfect. The whole time we were eating, my husband kept saying this is delicious. I felt like I was in a swanky restaurant (well except for the fact we were eating off of Fiesta dishes). Lol
