Dessert brownie with mascarpone and raspberries

Brownie is that kind of decadent chocolate cake, which if you taste it, you certainly can't stop at one piece. It is not excessively sweet, it is slightly moist, creamy, and if you add a word of whipped cream and a few raspberries, it represents the maximum pampering on a weekend day and satisfies the cravings of any pretentious person.   • 200 g dark chocolate
  • 200 g butter
  • 4 eggs
  • 250 g sugar
  • 3 tablespoons cocoa
  • 220 g flour
  • 2 tablespoons raspberry puree
  • Cream:
  • 200 ml sweet cream for whipped cream (Pilos)
  • 250 g mascarpone
  • 2-3 tablespoons powdered sugar
  • vanilla essence

Preparation time: less than 90 minutes

RECIPE PREPARATION Dessert brownie with mascarpone and raspberries:

Break the chocolate into pieces, place in a saucepan with the butter and melt together in a bain-marie, stirring constantly. After they have melted, resulting in a glossy cream, leave to cool. In a bowl beat eggs with sugar. Then add the chocolate cream, flour and cocoa and finally the two tablespoons of raspberry puree. (You can add whole raspberries, but I preferred to pass the raspberries and add the puree, because my people don't like the smell of raspberries.) It's good to put cocoa and flour in a sieve and sift it so that it doesn't he had lumps. Place the composition in a tray (20/30) lined with baking paper. Bake the cake for 25-30 minutes, until it passes the toothpick test. Under no circumstances leave the cake longer to bake. It must have a moist texture, we do not want a dry and drowning top. Put all the ingredients for the cream in the bowl of the mixer and mix for 3 minutes at high speed. We cut the cake into 24 approximately equal squares. Put the cream in a posh to which we attach a dui and form hazelnuts on each cake. Garnish with grated chocolate and fresh raspberries.


The raspberry and peach cheesecake is not technically a real cheesecake, without cheese, but let's not forget that it is a raw recipe. If you choose to prepare it for the guests and you do not tell them that it is a raw vegan recipe, we assure you that they will not even realize it.

Chop the dried cashews in a blender until fine, like a flour. Add the other ingredients for the crispy base and mix a few more times until they are all well blended, but not so much that it becomes an oily mixture.

Arrange this mixture in a detachable shape (22cm) until it covers it evenly and press well. Refrigerate while you prepare the cream.

Cheesecake cream is extremely easy to prepare: just add all the ingredients in a blender and mix for 2-3 minutes until smooth and becomes a creamy mixture.

Pour the prepared cream over the crispy crust and leave it in the freezer for an hour, then transfer the cake to the fridge overnight.

Serve the cheesecake (no cheese) with raspberries and cold peaches, decorated with fresh raspberries and mint leaves. You can sprinkle it with a little lemon juice.


Brownie with almond flour

Less than two weeks until Easter and I already know by now what desserts I will prepare.
I love chocolate, so today I prepared for you a slightly more special brownie recipe, with an intense taste of chocolate and almonds.
Every time I come up with a new cake recipe it is always a hit. Whether it's ice cream, biscuit salami or even a simple pudding, mine are always super happy. So it was with this almond flour brownie recipe.
I chose to use coconut sugar, for its discreet caramel taste that I leave in any dessert, coconut oil, because it is very healthy and in desserts it is great, and almond flour for its high content of healthy fats, fiber, proteins and minerals.

You can replace cocoa with roscove flour, and the cake will be ideal for children.

It is a dense cake, with an intense taste of chocolate and almonds, not very sweet, because I do not like sweet desserts, consistent and full.
